Ingredients

Banana Blondies with Brown Sugar Icing

  • 225g butter - melted and cooled
  • 2 cups brown sugar
  • 2 eggs
  • 3 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 2 cups flour
  • 3 over ripe bananas - mashed

Brown Sugar Icing

  • 115g butter
  • 1/2 cup brown sugar
  • 2 tablespoons milk
  • 1 1/2 cups icing sugar

Method

Banana Blondies with Brown Sugar Icing

  • Preheat oven to 180oC (160oC fan bake). Line an 18cm x 28cm slice tin with baking paper.
  • Beat the butter and sugar together. Add in the eggs and vanilla extract.
  • Fold in the salt, flour and mashed banana. Tip the mixture into the prepared slice tin and bake for 40 minutes or until a skewer comes out clean. Leave to cool.

Brown Butter Icing

  • In a medium saucepan, melt the butter, add the brown sugar and milk and stir until mixture comes to a simmer. Set aside to cool.
  • Whisk in the icing sugar and spread evenly over the blondie.
  • Leave to set before cutting into pieces.
