Banana Blondies with Brown Sugar Icing
- 225g butter - melted and cooled
- 2 cups brown sugar
- 2 eggs
- 3 teaspoons vanilla extract
- 1/2 teaspoon salt
- 2 cups flour
- 3 over ripe bananas - mashed
Brown Sugar Icing
- 115g butter
- 1/2 cup brown sugar
- 2 tablespoons milk
- 1 1/2 cups icing sugar
Method
Banana Blondies with Brown Sugar Icing
- Preheat oven to 180oC (160oC fan bake). Line an 18cm x 28cm slice tin with baking paper.
- Beat the butter and sugar together. Add in the eggs and vanilla extract.
- Fold in the salt, flour and mashed banana. Tip the mixture into the prepared slice tin and bake for 40 minutes or until a skewer comes out clean. Leave to cool.
Brown Butter Icing
- In a medium saucepan, melt the butter, add the brown sugar and milk and stir until mixture comes to a simmer. Set aside to cool.
- Whisk in the icing sugar and spread evenly over the blondie.
- Leave to set before cutting into pieces.
