Brown Sugar & Honey Shortbread
- 345g butter - softened
- 3/4 cup brown sugar
- 1/4 cup honey
- 3 cups flour
- 3/4 cup cornflour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- Raw sugar for sprinkling
Method
Brown Sugar & Honey Shortbread
- Line two baking trays with baking paper.
- Beat the butter until smooth and creamy. Beat in the brown sugar and honey.
- Sift over the flour, cornflour, salt and baking powder. Mix until well combined.
- On a lightly floured surface, tip the mixture out and make into a ball. Knead a few times then roll the mixture out to 6mm.
- Cut out whatever shape you like and place the shortbread shapes onto the prepared shapes.
- Sprinkle the shortbread with raw sugar.
- Place the trays in the fridge for one hour.
- Preheat oven to 180oC (160oC fan bake).
- Bake for 10 - 15 minutes or until golden brown.
