Ingredients

Brown Sugar & Honey Shortbread

  • 345g butter - softened
  • 3/4 cup brown sugar
  • 1/4 cup honey
  • 3 cups flour
  • 3/4 cup cornflour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • Raw sugar for sprinkling

Method

Brown Sugar & Honey Shortbread

  • Line two baking trays with baking paper.
  • Beat the butter until smooth and creamy. Beat in the brown sugar and honey.
  • Sift over the flour, cornflour, salt and baking powder. Mix until well combined.
  • On a lightly floured surface, tip the mixture out and make into a ball. Knead a few times then roll the mixture out to 6mm.
  • Cut out whatever shape you like and place the shortbread shapes onto the prepared shapes.
  • Sprinkle the shortbread with raw sugar.
  • Place the trays in the fridge for one hour.
  • Preheat oven to 180oC (160oC fan bake).
  • Bake for 10 - 15 minutes or until golden brown.
