Ingredients

Buttermilk Chicken Tenders with BBQ Dipping Sauce

  • 600g chicken tenders
  • 1 cup buttermilk - or 1 tablespoon lemon juice mixed with 1 cup milk - leave for 10 minutes
  • 1 1/3 cups flour
  • 1 tablespoon garlic salt
  • 1 tablespoon paprika
  • 1 tablespoon dried parsley
  • 1/2 tablespoon black pepper
  • Pinch cayenne pepper
  • 2 eggs - whisked
  • Cooking oil for deep frying

BBQ Dipping Sauce

  • 2/3 cup mayonnaise
  • 1/4 cup bbq sauce

Method

Buttermilk Chicken Tenders with BBQ Dipping Sauce

  • Marinate the chicken tenders in the buttermilk for one hour.
  • Whisk all the dry ingredients together.
  • Dip each chicken tender into the flour mixture, then the egg mixture and again in the flour mixture.
  • Heat the oil to a medium/high temperature and deep fry the chicken until golden and cooked through.
  • Season with a little extra garlic salt.
  • Mix the dipping sauce ingredients together and serve with the chicken.
