Chicken, Mushroom & Brocolli Stir Fry
- 750g boneless chicken thighs - cut into bite size pieces
- 1 tablespoon mirin
- 1/2 teaspoon garlic salt
- 1 teaspoon cornflour
Sauce
- 3 tablespoons oyster sauce
- 2 tablespoons mirin
- 1/2 tablespoon soy sauce
- 1/4 cup chicken stock
- 1 tablespoon each: sugar, cornflour
- 1/4 teaspoon garlic salt
Stir Fry
- 2 tablespoons cooking oil
- 1 onion - diced
- 1 cup mushrooms - sliced
- 1 heat brocolli - cut into thin strips
- 4 cloves garlic - crushed
- 1 teaspoon fresh ginger - grated
Method
Chicken, Mushroom & Brocolli Stir Fry
- In a medium bowl, combine the chicken with the following three ingredients to marinate.
- In a small bowl, whisk all the sauce ingredients together - set aside.
- Heat the oil in a large frying pan or wok over a high heat.
- Add in the chicken and cook for 2 minutes without disturbing. Flip the chicken and cook for a further 2 minutes without disturbing - set aside.
- To the same pan, add the onion, mushrooms and brocolli. Stir fry over a medium heat for about 3 minutes. Stir through the garlic and ginger and cook for a further minute.
- Add the chicken and any resting juices back into the pan. Stir through the sauce and simmer for a couple of minutes.
