Ingredients

Chicken, Mushroom & Brocolli Stir Fry

  • 750g boneless chicken thighs - cut into bite size pieces
  • 1 tablespoon mirin
  • 1/2 teaspoon garlic salt
  • 1 teaspoon cornflour

Sauce

  • 3 tablespoons oyster sauce
  • 2 tablespoons mirin
  • 1/2 tablespoon soy sauce
  • 1/4 cup chicken stock
  • 1 tablespoon each: sugar, cornflour
  • 1/4 teaspoon garlic salt

Stir Fry

  • 2 tablespoons cooking oil
  • 1 onion - diced
  • 1 cup mushrooms - sliced
  • 1 heat brocolli - cut into thin strips
  • 4 cloves garlic - crushed
  • 1 teaspoon fresh ginger - grated

Method

Chicken, Mushroom & Brocolli Stir Fry

  • In a medium bowl, combine the chicken with the following three ingredients to marinate.
  • In a small bowl, whisk all the sauce ingredients together - set aside.
  • Heat the oil in a large frying pan or wok over a high heat.
  • Add in the chicken and cook for 2 minutes without disturbing. Flip the chicken and cook for a further 2 minutes without disturbing - set aside.
  • To the same pan, add the onion, mushrooms and brocolli. Stir fry over a medium heat for about 3 minutes. Stir through the garlic and ginger and cook for a further minute.
  • Add the chicken and any resting juices back into the pan. Stir through the sauce and simmer for a couple of minutes.
