Ingredients
Chocolate Cupcakes with Buttercream Icing
- 2 cups sugar
- 1 3/4 cups flour
- 3/4 cup cocoa
- 1 1/2 teaspoons each: baking powder, baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup coffee - boiling hot
Buttercream Icing
- 230g butter - softened
- 3 cups icing sugar
- 2 - 3 tablespoons cream
- 1 teaspoon vanilla extract
- Pinch salt
- Food colouring - optional
Method
Chocolate Cupcakes with Buttercream Icing
- Preheat oven to 180oC (160oC fan bake). Line muffin tins with paper liners.
- Place all the dry ingredients into a mixer and mix well.
- Add in all the other ingredients and mix well.
- Tip some of the mixture into a jug and fill each paper liner to 3/4 full.
- Bake for 18 - 22 minutes or until cooked through. Set aside to cool.
Buttercream Icing
- Beat the butter until creamy, add in the icing sugar and beat again.
- Add in enough cream to make an icing consistency along with the vanilla, salt and food colouring if using.
- Place the buttercream into a piping bag and pipe on top of each cupcake.
