Ingredients

Chocolate Cupcakes with Buttercream Icing

  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup cocoa
  • 1 1/2 teaspoons each: baking powder, baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup coffee - boiling hot

Buttercream Icing

  • 230g butter - softened
  • 3 cups icing sugar
  • 2 - 3 tablespoons cream
  • 1 teaspoon vanilla extract
  • Pinch salt
  • Food colouring - optional

Method

Chocolate Cupcakes with Buttercream Icing

  • Preheat oven to 180oC (160oC fan bake). Line muffin tins with paper liners.
  • Place all the dry ingredients into a mixer and mix well.
  • Add in all the other ingredients and mix well.
  • Tip some of the mixture into a jug and fill each paper liner to 3/4 full.
  • Bake for 18 - 22 minutes or until cooked through. Set aside to cool.

Buttercream Icing

  • Beat the butter until creamy, add in the icing sugar and beat again.
  • Add in enough cream to make an icing consistency along with the vanilla, salt and food colouring if using.
  • Place the buttercream into a piping bag and pipe on top of each cupcake.
