Coconut and Thyme Chicken Drumsticks
- 1.5kg chicken drumsticks
- Garlic salt and freshly ground black pepper
- 2 tablespoons cooking oil
- 15g butter
- 6 thyme sprigs
- 1 whole garlic bulb - separated and peeled
- 400ml can coconut milk
Method
Coconut and Thyme Chicken Drumsticks
- Preheat oven to 190oC (170oC fan bake).
- Season the chicken with the garlic salt and pepper.
- Heat the oil and butter in a stovetop/oven proof casserole dish.
- Brown the chicken well on all sides.
- Add in the remaining ingredients, cover and bake for 1 hour or until the chicken is cooked through.
- Leave the chicken to stand for 10 minutes after removing from the oven.
