Coconut and Thyme Chicken Drumsticks

  • 1.5kg chicken drumsticks
  • Garlic salt and freshly ground black pepper
  • 2 tablespoons cooking oil
  • 15g butter
  • 6 thyme sprigs
  • 1 whole garlic bulb - separated and peeled
  • 400ml can coconut milk

Method

Coconut and Thyme Chicken Drumsticks

  • Preheat oven to 190oC (170oC fan bake).
  • Season the chicken with the garlic salt and pepper.
  • Heat the oil and butter in a stovetop/oven proof casserole dish.
  • Brown the chicken well on all sides.
  • Add in the remaining ingredients, cover and bake for 1 hour or until the chicken is cooked through.
  • Leave the chicken to stand for 10 minutes after removing from the oven.
