Creamy Garlic & Lemon Prawn Spaghetti
- 250g fresh spaghetti pasta
- 500g jumbo prawns - raw
- 30g butter
- 1 small onion - finely diced
- 1/4 teaspoon Italian herbs
- 6 cloves garlic - crushed
- 1/2 cup dry white wine
- Juice of 1 lemon
- 1 1/2 cups cream
- Pinch cayenne pepper
- 1 cup parmesan cheese - grated
- 1/4 cup pasta water
- Fresh parsley and dill for serving
Method
Creamy Garlic & Lemon Prawn Spaghetti
- Cook the pasta in salted boiling water according to packet instructions. Set aside 1/4 cup of the pasta water, drain the pasta.
- Remove the tails from the prawns.
- Heat the butter in a large frying pan and sauté the onion for a few minutes. Add in the hers and garlic and cook for a further minute.
- Pour in the wine and let it reduce by half. Add in the lemon juice, cream and cayenne pepper. Simmer for 5 minutes.
- Stir through the cheese and pasta water. Add in the prawns and cook for 5 minutes. Toss through the cooked spaghetti and heat through.
- Serve garnished with chopped parsley and dill.
