Creamy Garlic & Lemon Prawn Spaghetti

  • 250g fresh spaghetti pasta
  • 500g jumbo prawns - raw
  • 30g butter
  • 1 small onion - finely diced
  • 1/4 teaspoon Italian herbs
  • 6 cloves garlic - crushed
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • 1 1/2 cups cream
  • Pinch cayenne pepper
  • 1 cup parmesan cheese - grated
  • 1/4 cup pasta water
  • Fresh parsley and dill for serving

Method

Creamy Garlic & Lemon Prawn Spaghetti

  • Cook the pasta in salted boiling water according to packet instructions. Set aside 1/4 cup of the pasta water, drain the pasta.
  • Remove the tails from the prawns.
  • Heat the butter in a large frying pan and sauté the onion for a few minutes. Add in the hers and garlic and cook for a further minute.
  • Pour in the wine and let it reduce by half. Add in the lemon juice, cream and cayenne pepper. Simmer for 5 minutes.
  • Stir through the cheese and pasta water. Add in the prawns and cook for 5 minutes. Toss through the cooked spaghetti and heat through.
  • Serve garnished with chopped parsley and dill.
