Ingredients
Creole Cajun Sausages
- 10 - 12 sausages
- 1 tablespoon cooking oil
- 1 onion - sliced
- 1 red capsicum - sliced
- 1 green capsicum - sliced
- 3 cloves garlic - crushed
- 1 teaspoon white pepper
- 1 teaspoon creole Cajun seasoning
- 2 tablespoons tomato paste
- 1 cup chicken stock
- 1 x 400g can diced tomatoes
- Garlic salt to taste
Method
Creole Cajun Sausages
- Heat the oil in a large frying pan over a medium/high heat. Brown the sausages on all sides - set aside.
- To the same pan, add the onion and capsicums. Sauté for 3 - 4 minutes.
- Stir in the garlic, white pepper, Cajun seasoning and tomato paste. Cook for 1 minute.
- Pour in the chicken stock and tomatoes.
- Bring to a simmer and add the sausages back in. simmer for 10 minutes.
- Season with garlic salt if desired.
