Ingredients

Creole Cajun Sausages

  • 10 - 12 sausages
  • 1 tablespoon cooking oil
  • 1 onion - sliced
  • 1 red capsicum - sliced
  • 1 green capsicum - sliced
  • 3 cloves garlic - crushed
  • 1 teaspoon white pepper
  • 1 teaspoon creole Cajun seasoning
  • 2 tablespoons tomato paste
  • 1 cup chicken stock
  • 1 x 400g can diced tomatoes
  • Garlic salt to taste

Method

Creole Cajun Sausages

  • Heat the oil in a large frying pan over a medium/high heat. Brown the sausages on all sides - set aside.
  • To the same pan, add the onion and capsicums. Sauté for 3 - 4 minutes.
  • Stir in the garlic, white pepper, Cajun seasoning and tomato paste. Cook for 1 minute.
  • Pour in the chicken stock and tomatoes.
  • Bring to a simmer and add the sausages back in. simmer for 10 minutes.
  • Season with garlic salt if desired.
