Double Ginger Cookies
- 125g butter - softened
- 1 cup sugar
- 1 egg
- 1 tablespoon golden syrup
- 2 cups flour
- 2 - 3 teaspoons ground ginger
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 - 1/2 cup crystalised ginger - finely chopped
Method
Preheat oven to 180oC (160oC fan bake). Line two baking trays with baking paper.
- Cream the butter and sugar until light and creamy.
- Beat in the egg and golden syrup.
- Whisk the flour, ground ginger, baking powder and baking soda together.
- Beat the dry ingredients into the butter mixture with the crystalised ginger.
- Roll the mixture into balls and place on the prepared baking trays.
- Flatten the cookies slightly with the palm of your hand.
- Bake for 18 - 20 minutes or until golden brown.
