Easter Meringue Nests

  • 4 egg whites
  • 225g caster sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornflour
  • 125g milk chocolate - melted and cooled
  • Whipped cream and Easter chocolates for serving

Method

Easter Meringue Nests

  • Preheat the oven to 120oC (100oC fan bake). Line two baking trays with baking paper.
  • Whisk the egg whites until stiff peaks form.
  • Add in the sugar, one tablespoon at a time while still beating.
  • Beat in the vinegar and cornflour and beat for an additional 3 minutes.
  • Place 10 heaped tablespoons of the meringue onto the prepared baking trays.
  • Top each meringue with a spoonful of chocolate and use a skewer to swirl the chocolate through each meringue.
  • Bake for 60 minutes. Turn off the oven and leave the meringues in the oven for several hours.
  • To serve - top each meringue with whipped cream and Easter chocolates.
