Easter Meringue Nests
- 4 egg whites
- 225g caster sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornflour
- 125g milk chocolate - melted and cooled
- Whipped cream and Easter chocolates for serving
Method
Easter Meringue Nests
- Preheat the oven to 120oC (100oC fan bake). Line two baking trays with baking paper.
- Whisk the egg whites until stiff peaks form.
- Add in the sugar, one tablespoon at a time while still beating.
- Beat in the vinegar and cornflour and beat for an additional 3 minutes.
- Place 10 heaped tablespoons of the meringue onto the prepared baking trays.
- Top each meringue with a spoonful of chocolate and use a skewer to swirl the chocolate through each meringue.
- Bake for 60 minutes. Turn off the oven and leave the meringues in the oven for several hours.
- To serve - top each meringue with whipped cream and Easter chocolates.
