Fish and Prawns with Citrus Butter
- 4 fish fillets
- 16 raw prawns
Citrus Butter
- 115g butter - softened
- 1/2 orange - peeled and diced
- 2 teaspoons each: orange zest, lemon zest
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Method
Fish and Prawns with Citrus Butter
- Add all the citrus butter ingredients to a blender and blend until smooth.
- Heat 2 tablespoons of citrus butter to a large frying pan over a medium heat.
- Add in the fish fillets and cook until the bottom is browned. Add in some more citrus butter, flip the fish fillets over and add in the prawns. Cook until the fish and prawns are cooked through.
- Serve the fish with the prawns and a dollop of the remaining citrus butter on top.
