Fish Cakes
- 300g fish fillets
- Milk
- Garlic salt and freshly ground black pepper
- 2 medium potatoes - boiled and mashed
- 100g hot smoked salmon - flaked
- 1 tablespoon flour - plus extra for dredging
- 1 lemon - juice and zest
- 2 tablespoons fresh parsley - finely chopped
- Cooking oil for frying
- Tartare sauce for serving
Method
Fish Cakes
- Place the fish fillets into a small frying pan and just cover with milk. Season with garlic salt and pepper. Simmer until the fish is flaky. Drain and flake into a medium bowl.
- Aff the remaining ingredients to the bowl and mix well. Place in the refrigerator to firm up.
- Roll the mixture into 6 balls, flatten and dredge in extra flour.
- Preheat the oven to 180oC (160oC fan bake).
- Heat some cooking oil in a large, ovenproof frying pan and brown the fish cakes on both sides.
- Place the pan in the oven and cook for 10 minutes.
- Serve with tartare sauce.
