Ingredients

Fish Cakes

  • 300g fish fillets
  • Milk
  • Garlic salt and freshly ground black pepper
  • 2 medium potatoes - boiled and mashed
  • 100g hot smoked salmon - flaked
  • 1 tablespoon flour - plus extra for dredging
  • 1 lemon - juice and zest
  • 2 tablespoons fresh parsley - finely chopped
  • Cooking oil for frying
  • Tartare sauce for serving

Method

Fish Cakes

  • Place the fish fillets into a small frying pan and just cover with milk. Season with garlic salt and pepper. Simmer until the fish is flaky. Drain and flake into a medium bowl.
  • Aff the remaining ingredients to the bowl and mix well. Place in the refrigerator to firm up.
  • Roll the mixture into 6 balls, flatten and dredge in extra flour.
  • Preheat the oven to 180oC (160oC fan bake).
  • Heat some cooking oil in a large, ovenproof frying pan and brown the fish cakes on both sides.
  • Place the pan in the oven and cook for 10 minutes.
  • Serve with tartare sauce.
