Fish with Creamy Lemon Butter Sauce
- 4 fish fillets
- Garlic salt and freshly ground black pepper
- 1 tablespoon olive oil
- 10g butter
Creamy Lemon Butter Sauce
- 120g butter - cubed
- 2 cloves garlic - crushed
- 1 cup cream
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Method
Fish with Creamy Lemon Butter Sauce
- Season the fish fillets with garlic salt and pepper.
- Heat 1 tablespoon olive oil and 10g butter in a large frying pan and cook the fish fillets until golden and cooked through - set aside on a warm plate covered with foil.
Creamy lemon Butter Sauce
- Melt the butter in a medium saucepan over a medium heat. Add in the garlic and sauté for a minute. Pour in the cream and cook for 3 - 5 minutes or until the mixture is starting to thicken.
- Add in the lemon zest, juice and mustard. Cook for an additional 2 - 3 minutes. Taste and season with salt and pepper.
- Serve the fish with a good spoonful of the sauce.
