Fish with Creamy Lemon Butter Sauce

  • 4 fish fillets
  • Garlic salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 10g butter

Creamy Lemon Butter Sauce

  • 120g butter - cubed
  • 2 cloves garlic - crushed
  • 1 cup cream
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method

Fish with Creamy Lemon Butter Sauce

  • Season the fish fillets with garlic salt and pepper.
  • Heat 1 tablespoon olive oil and 10g butter in a large frying pan and cook the fish fillets until golden and cooked through - set aside on a warm plate covered with foil.

Creamy lemon Butter Sauce

  • Melt the butter in a medium saucepan over a medium heat. Add in the garlic and sauté for a minute. Pour in the cream and cook for 3 - 5 minutes or until the mixture is starting to thicken.
  • Add in the lemon zest, juice and mustard. Cook for an additional 2 - 3 minutes. Taste and season with salt and pepper.
  • Serve the fish with a good spoonful of the sauce.
