Ingredients

Fluffy Brown sugar Banana Pancakes

  • 1 1/2 cups flour
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 bananas - mashed
  • 3/4 cup buttermilk or 3/4 cup milk mixed with 3/4 tablespoon lemon juice - leave for 10 minutes
  • 1 egg
  • 30g butter - melted
  • 1 teaspoon vanilla extract

Cooking & Serving

  • 30g butter
  • 1 tablespoon cooking oil
  • Sliced banana and maple syrup for serving

Method

Fluffy Brown Sugar Banana Pancakes

  • In a medium bowl, whisk together the dry ingredients.
  • In a small bowl, mix together the mashed banana, buttermilk, egg, butter and vanilla extract.
  • Tip the wet ingredients into the dry ingredients and mix to make a batter.
  • Heat the extra 30g butter and oil together in a non-stick frying pan over a medium heat.
  • Drop three large spoonsful of the mixture into the pan and cook the pancakes for about 2 - 3 minutes each side or until golden and cooked through.
  • Serve the pancakes with sliced banana and maple syrup.
