Fluffy Brown sugar Banana Pancakes
- 1 1/2 cups flour
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 bananas - mashed
- 3/4 cup buttermilk or 3/4 cup milk mixed with 3/4 tablespoon lemon juice - leave for 10 minutes
- 1 egg
- 30g butter - melted
- 1 teaspoon vanilla extract
Cooking & Serving
- 30g butter
- 1 tablespoon cooking oil
- Sliced banana and maple syrup for serving
Method
Fluffy Brown Sugar Banana Pancakes
- In a medium bowl, whisk together the dry ingredients.
- In a small bowl, mix together the mashed banana, buttermilk, egg, butter and vanilla extract.
- Tip the wet ingredients into the dry ingredients and mix to make a batter.
- Heat the extra 30g butter and oil together in a non-stick frying pan over a medium heat.
- Drop three large spoonsful of the mixture into the pan and cook the pancakes for about 2 - 3 minutes each side or until golden and cooked through.
- Serve the pancakes with sliced banana and maple syrup.
