Ingredients

Fresh Herb and Feta Scones

  • 2 cups flour
  • 1/2 cup feta - crumbled
  • 2 tablespoons each: fresh parsley, dill and basil - finely chopped
  • 1 spring onion - finely chopped
  • 1/2 tablespoon lemon zest
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon freshly ground black pepper
  • 90g butter - grated
  • 3/4-1 cup buttermilk - or substitute with 3/4-1 cup milk mixed with 1 tablespoon lemon juice

Method

Fresh Herb and Feta Scones

  • Preheat oven to 230oC 9210oC fan bake). Line a baking tray with baking paper.
  • In a large bowl, combine all the ingredients except the butter and milk.
  • Stir in the butter and then just enough milk to form a soft dough.
  • Tip the mixture out onto a lightly floured surface and knead a few times.
  • Roll the dough out to 2.5cm and cut into 6 scones.
  • Bake for 10 minutes or until golden brown and cooked through.
