Fresh Herb and Feta Scones
- 2 cups flour
- 1/2 cup feta - crumbled
- 2 tablespoons each: fresh parsley, dill and basil - finely chopped
- 1 spring onion - finely chopped
- 1/2 tablespoon lemon zest
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/8 teaspoon freshly ground black pepper
- 90g butter - grated
- 3/4-1 cup buttermilk - or substitute with 3/4-1 cup milk mixed with 1 tablespoon lemon juice
Method
Fresh Herb and Feta Scones
- Preheat oven to 230oC 9210oC fan bake). Line a baking tray with baking paper.
- In a large bowl, combine all the ingredients except the butter and milk.
- Stir in the butter and then just enough milk to form a soft dough.
- Tip the mixture out onto a lightly floured surface and knead a few times.
- Roll the dough out to 2.5cm and cut into 6 scones.
- Bake for 10 minutes or until golden brown and cooked through.
