Garlic Butter Tuscan Prawn Spaghetti
- 200g raw spaghetti
- 30g butter
- 6 cloves garlic - crushed
- 10 large prawns - tails on
- 1 onion - finely diced
- 1/2 cup white wine
- 1/3 cup sundried tomatoes in oil - diced
- 1 3/4 cups cream
- Garlic salt and freshly ground black pepper to taste
- 2 teaspoons Italian herbs
- 3 cups baby spinach
- 2/3 cup parmesan - grated
- 1 tomato - diced small and seasoned for serving
Method
Garlic Butter Tuscan Prawn Spaghetti
- Cook the spaghetti in salted boiling water for 2 minutes less than packet instructions. Drain and set aside.
- In a large frying pan, melt the butter and garlic together.
- Pan fry the prawns for 1 - 2 minutes - set aside. the prawns will finish cooking in the sauce.
- Add 2 teaspoons of the oil from the jar of sundried tomatoes to the pan. Sauté the onion for 2 - 3 minutes.
- Add in the wine and simmer until reduced by half. Add in the sundried tomatoes and cook for 2 minutes.
- Add in the cream, seasonings, herbs, spinach and parmesan and cook for 1 minute.
- Add in the pasta and prawns and simmer for a few minutes.
- Serve topped with the diced fresh tomato.
