Ingredients

Lamb with Bread Salsa

  • 700g lamb rack with 8 bones - cut into 4
  • Garlic salt and freshly ground black pepper
  • Drizzle of olive oil

Bread Salsa

  • 2 slices bread
  • 1/2 shallot - chopped
  • 1/4 cup parsley - chopped
  • 1 tablespoon fresh thyme - chopped
  • 1 tablespoon capers
  • 2 anchovies
  • 2 tablespoons olive oil to fry the salsa

Method

Lamb with Bread Salsa

  • Season the lamb with the garlic salt and pepper. Drizzle over some oil - set aside.
  • In a blender, whizz all the salsa ingredients together.
  • Preheat oven to 180oC (160oC fan bake).
  • Heat a frying pan over a medium/high heat. Pan fry the lamb on all sides.
  • Place the pan in the oven for 8 - 12 minutes or until the lamb reaches 56oC. Leave to rest on a warm plate and cover with foil.
  • To the pan, add 2 tablespoons olive oil and pan fry the salsa until golden and crunchy.
  • Serve the rested lamb with the bread salsa.
