Lamb with Bread Salsa
- 700g lamb rack with 8 bones - cut into 4
- Garlic salt and freshly ground black pepper
- Drizzle of olive oil
Bread Salsa
- 2 slices bread
- 1/2 shallot - chopped
- 1/4 cup parsley - chopped
- 1 tablespoon fresh thyme - chopped
- 1 tablespoon capers
- 2 anchovies
- 2 tablespoons olive oil to fry the salsa
Method
Lamb with Bread Salsa
- Season the lamb with the garlic salt and pepper. Drizzle over some oil - set aside.
- In a blender, whizz all the salsa ingredients together.
- Preheat oven to 180oC (160oC fan bake).
- Heat a frying pan over a medium/high heat. Pan fry the lamb on all sides.
- Place the pan in the oven for 8 - 12 minutes or until the lamb reaches 56oC. Leave to rest on a warm plate and cover with foil.
- To the pan, add 2 tablespoons olive oil and pan fry the salsa until golden and crunchy.
- Serve the rested lamb with the bread salsa.
