Ingredients

Margarita Chicken

  • 4 chicken breasts
  • 2 tablespoons cooking oil

Seasoning

  • 1 1/2 teaspoons each: garlic powder, onion powder, garlic salt, Italian herbs
  • 1/2 teaspoon pepper

Topping

  • 2 cups mozzarella - grated
  • 1/2 cup baby tomatoes - halved
  • 1/2 cup fresh chopped basil or 1 teaspoon dried basil
  • 1/4 cup red onion - diced
  • 1/4 cup basil pesto

Method

Margarita Chicken

  • Beat the chicken breasts between two pieces of baking paper with a rolling pin until they are 1 1/2cm in thickness.
  • Combine all the seasoning ingredients on a plate. Coat both sides of the chicken breasts.
  • Heat the cooking oil in an oven proof frying pan, over a medium/high heat.
  • Cook the chicken for 4 minutes each side.
  • Turn on your oven grill.
  • Leaving the chicken in the frying pan, spread the pesto over each chicken breast.
  • Evenly sprinkle over the topping ingredients.
  • Place the frying pan in the oven and grill until golden brown.
