Ingredients
Margarita Chicken
- 4 chicken breasts
- 2 tablespoons cooking oil
Seasoning
- 1 1/2 teaspoons each: garlic powder, onion powder, garlic salt, Italian herbs
- 1/2 teaspoon pepper
Topping
- 2 cups mozzarella - grated
- 1/2 cup baby tomatoes - halved
- 1/2 cup fresh chopped basil or 1 teaspoon dried basil
- 1/4 cup red onion - diced
- 1/4 cup basil pesto
Method
Margarita Chicken
- Beat the chicken breasts between two pieces of baking paper with a rolling pin until they are 1 1/2cm in thickness.
- Combine all the seasoning ingredients on a plate. Coat both sides of the chicken breasts.
- Heat the cooking oil in an oven proof frying pan, over a medium/high heat.
- Cook the chicken for 4 minutes each side.
- Turn on your oven grill.
- Leaving the chicken in the frying pan, spread the pesto over each chicken breast.
- Evenly sprinkle over the topping ingredients.
- Place the frying pan in the oven and grill until golden brown.
