- 2 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup caster sugar
Method
Mini Meringues
- Preheat oven to 95oC (75oC fan bake). Line a baking tray with baking paper.
- Beat the egg whites and cream of tartar until stiff peaks form.
- Slowly add the sugar, a tablespoon at a time.
- Beat until the sugar is well incorporated and the mixture is thick and glossy.
- Transfer the mixture to a piping bag and pipe small meringues onto the prepared baking tray.
- Bake for 2 hours. Turn the oven off and leave in the oven for a further 1 hour.
