Ingredients
Mussels In Lemon Garlic Sauce
- 800g mussels - cleaned and debearded
- 35g butter
- 1 small onion - finely diced
- 4 cloves garlic - crushed
- Pinch chilli flakes
- 1 cup dry white wine
- 1 cup cream
- 1 lemon - zest and juice
- Garlic salt and freshly ground black pepper to taste
- Handful parsley - chopped
- Crispy garlic bread for serving
Method
Mussels In Lemon Garlic Sauce
- In a large saucepan, melt the butter and sauté the onion for 3 minutes. Add in the garlic and chilli and cook for a further minute.
- Deglaze the pan with the wine and reduce by a third.
- Add in the cream and cook for 2 minutes.
- Add in the mussels and cook for 8 - 10 minutes.
- Stir through the lemon zest and juice. Season to your taste and stir through the parsley.
- Only serve the mussels that have opened.
