Ingredients

Mussels In Lemon Garlic Sauce

  • 800g mussels - cleaned and debearded
  • 35g butter
  • 1 small onion - finely diced
  • 4 cloves garlic - crushed
  • Pinch chilli flakes
  • 1 cup dry white wine
  • 1 cup cream
  • 1 lemon - zest and juice
  • Garlic salt and freshly ground black pepper to taste
  • Handful parsley - chopped
  • Crispy garlic bread for serving

Method

Mussels In Lemon Garlic Sauce

  • In a large saucepan, melt the butter and sauté the onion for 3 minutes. Add in the garlic and chilli and cook for a further minute.
  • Deglaze the pan with the wine and reduce by a third.
  • Add in the cream and cook for 2 minutes.
  • Add in the mussels and cook for 8 - 10 minutes.
  • Stir through the lemon zest and juice. Season to your taste and stir through the parsley.
  • Only serve the mussels that have opened.
