Ingredients

Orange & Maple Kumara Puree

  • 700g orange kumara - peeled and cut into 1.5cm chunks
  • 1/4 cup olive oil
  • 1 teaspoon smoked paprika
  • Garlic salt and freshly ground black pepper
  • 1/4 cup maple syrup
  • 1/2 cup cream

Method

orange & Maple Kumara Puree

  • Preheat oven to 200oC (180oC fan bake).
  • In a large bowl, combine the kumara, oil, smoked paprika and season.
  • Tip the mixture into a large roasting dish and cook for 30 minutes.
  • Stir through the maple syrup and cook for an additional 5 minutes.
  • Add in the cream and cook for another 10 minutes.
  • Tip the mixture into a food processor and blitz until smooth and creamy.
