Orange & Maple Kumara Puree
- 700g orange kumara - peeled and cut into 1.5cm chunks
- 1/4 cup olive oil
- 1 teaspoon smoked paprika
- Garlic salt and freshly ground black pepper
- 1/4 cup maple syrup
- 1/2 cup cream
Method

- Preheat oven to 200oC (180oC fan bake).
- In a large bowl, combine the kumara, oil, smoked paprika and season.
- Tip the mixture into a large roasting dish and cook for 30 minutes.
- Stir through the maple syrup and cook for an additional 5 minutes.
- Add in the cream and cook for another 10 minutes.
- Tip the mixture into a food processor and blitz until smooth and creamy.
