Paprika Chicken with Spinach and Thyme butter Sauce

  • 750g chicken thighs - skinless and boneless
  • 2 teaspoons paprika
  • Garlic salt and freshly ground black pepper
  • 65g butter
  • 3 tablespoons fresh thyme - finely chopped
  • 3 cloves garlic - crushed
  • 1 cup white wine
  • 2 handfuls of baby spinach

Method

Paprika Chicken with Spinach and Thyme Butter Sauce

  • Season the chicken with the paprika and a good sprinkle of garlic salt and pepper.
  • Heat 15g butter in a large pan over a medium/high heat. Brown the chicken on each side for about 2 - 3 minutes.
  • Add in the remaining 50g butter, fresh thyme and garlic. Cook for 2 minutes.
  • Pour in the wine and cook for 10 minutes.
  • Stir through the baby spinach and cook for 2 minutes.
