Ingredients

Base

  • 100g flour
  • 75g butter - cubed
  • 50g caster sugar
  • 1/2 teaspoon baking powder

Filling

  • 2/3 cup plum jam

Almond Topping

  • 100g butter - softened
  • 100g caster sugar
  • 1 egg
  • 100g ground almonds
  • 1/2 teaspoon almond extract
  • 75g sliced almonds

Method

Plum & Almond Slice

  • Preheat the oven to 170oC (150oC fan bake). Line a 20cm square baking pan with baking paper.
  • Place all the base ingredients into a food processor and blitz.
  • Press the mixture into the prepared baking pan and place into the refrigerator.

Almond Topping

  • Cream the butter and sugar until light and fluffy. Beat in the egg, ground almonds and almond extract.

Plum & Almond Slice

  • Heat the jam in the microwave. Pour over the base and spread out evenly.
  • Top with the almond topping and sprinkle with the sliced almonds.
  • Bake for 35 - 40 minutes or until golden.
