Ingredients
Base
- 100g flour
- 75g butter - cubed
- 50g caster sugar
- 1/2 teaspoon baking powder
Filling
- 2/3 cup plum jam
Almond Topping
- 100g butter - softened
- 100g caster sugar
- 1 egg
- 100g ground almonds
- 1/2 teaspoon almond extract
- 75g sliced almonds
Method
Plum & Almond Slice
- Preheat the oven to 170oC (150oC fan bake). Line a 20cm square baking pan with baking paper.
- Place all the base ingredients into a food processor and blitz.
- Press the mixture into the prepared baking pan and place into the refrigerator.
Almond Topping
- Cream the butter and sugar until light and fluffy. Beat in the egg, ground almonds and almond extract.
Plum & Almond Slice
- Heat the jam in the microwave. Pour over the base and spread out evenly.
- Top with the almond topping and sprinkle with the sliced almonds.
- Bake for 35 - 40 minutes or until golden.
