Ingredients

Pork Fillet with Mustard Cream Sauce

  • 2 x 400g pork fillets
  • 1 tablespoon cooking oil
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground black pepper

Mustard Cream Sauce

  • 30g butter
  • 4 cloves garlic - crushed
  • 1 1/2 tablespoons fresh lemon juice
  • 1 cup cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon wholegrain mustard
  • Garlic salt and freshly ground black pepper to taste

Method

Pork Fillet with Mustard Cream Sauce

  • Combine all the dry ingredients and coat the pork fillets well.
  • Preheat the oven to 180oC (160oC fan bake). Line a roasting dish with baking paper.
  • Heat a large frying pan over a medium/high heat the sear the pork well on all sides.
  • Place the pork fillets into the prepared roasting dish and cook for 12 - 18 minutes, depending on how well done you like your pork. Place on a warm plate and cover with foil to rest the meat.
  • To the same pan add the butter and sauté the garlic for a minute. Add in all the other sauce ingredients and simmer until the sauce has thickened.
  • Tip any pork resting juices into the sauce.
  • Slice the pork and serve with the mustard cream sauce.
