Pork Fillet with Mustard Cream Sauce
- 2 x 400g pork fillets
- 1 tablespoon cooking oil
- 2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic salt
- 1/4 teaspoon freshly ground black pepper
Mustard Cream Sauce
- 30g butter
- 4 cloves garlic - crushed
- 1 1/2 tablespoons fresh lemon juice
- 1 cup cream
- 1 tablespoon Dijon mustard
- 1 tablespoon wholegrain mustard
- Garlic salt and freshly ground black pepper to taste
Method
Pork Fillet with Mustard Cream Sauce
- Combine all the dry ingredients and coat the pork fillets well.
- Preheat the oven to 180oC (160oC fan bake). Line a roasting dish with baking paper.
- Heat a large frying pan over a medium/high heat the sear the pork well on all sides.
- Place the pork fillets into the prepared roasting dish and cook for 12 - 18 minutes, depending on how well done you like your pork. Place on a warm plate and cover with foil to rest the meat.
- To the same pan add the butter and sauté the garlic for a minute. Add in all the other sauce ingredients and simmer until the sauce has thickened.
- Tip any pork resting juices into the sauce.
- Slice the pork and serve with the mustard cream sauce.
