Pork Fillet with Spiced Orange Sauce
- 2 x 400g - 500g pork fillets
Marinade
- 1/3 cup each: lemon juice, soy sauce, Marsala wine/sherry or port
- 2 cloves garlic - crushed
- 2 teaspoons ground ginger
Spiced Orange Sauce
- 1/3 cup sugar
- 2 cups fresh orange juice
- 1 tablespoon cornflour
- 1/2 teaspoon each: ground cinnamon, salt
- 5 whole cloves
Method
Pork Fillet with Spiced Orange Sauce
- Whisk all the marinade ingredients together. Pour over the pork and marinate over night.
- Preheat oven to 190oC (170oC fan bake).
- Heat an oven proof frying pan over a medium/high heat. Add in the pork fillets and sear well on all sides.
- Place the frying pan with the pork into the oven for 8 - 10 minutes, or until an internal temperature reaches 62.8oC. Set aside on a warm plate and cover with foil.
- Whisk all the sauce ingredients together and simmer in the same frying pan for 5 minutes or until thickened.
- Tip any pork resting juices into the sauce.
- Slice the pork and drizzle with the sauce.
