Ingredients

Raspberry & White Chocolate Cookies

  • 180g butter - melted
  • 1 cup brown sugar
  • 1/4 cup sugar
  • 1 egg plus 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup frozen raspberries

Method

Raspberry & White Chocolate Cookies

  • Preheat oven to 190oC (170oC fan bake). Line two baking trays with baking paper.
  • In a medium mixing bowl combine the melted butter, brown sugar and white sugar. Beat until well mixed.
  • Add in the egg, egg yolk and vanilla. Mix well.
  • In a separate large bowl whisk together the flour, baking soda and salt.
  • Add the wet ingredients to the wet ingredients. Don't overmix.
  • Fold through the chocolate chips and frozen raspberries.
  • Roll balls of the mixture and place on the prepared trays. Press slightly with your hand.
  • Bake for 12 - 14 minutes or until golden.
