Raspberry & White Chocolate Cookies
- 180g butter - melted
- 1 cup brown sugar
- 1/4 cup sugar
- 1 egg plus 1 egg yolk
- 1 teaspoon vanilla extract
- 2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1 cup frozen raspberries
Method
Raspberry & White Chocolate Cookies
- Preheat oven to 190oC (170oC fan bake). Line two baking trays with baking paper.
- In a medium mixing bowl combine the melted butter, brown sugar and white sugar. Beat until well mixed.
- Add in the egg, egg yolk and vanilla. Mix well.
- In a separate large bowl whisk together the flour, baking soda and salt.
- Add the wet ingredients to the wet ingredients. Don't overmix.
- Fold through the chocolate chips and frozen raspberries.
- Roll balls of the mixture and place on the prepared trays. Press slightly with your hand.
- Bake for 12 - 14 minutes or until golden.
