Ingredients

Salmon Florentine Fettucine

  • 2 salmon fillets - skin on
  • Garlic salt and freshly ground black pepper
  • Pinch chili flakes
  • 1 tablespoon cooking oil
  • 150g fettucine

Florentine Sauce

  • 1/2 onion - finely diced
  • 4 cloves garlic - crushed
  • 1 1/4 cups cream
  • 1/2 cup each: milk, pasta water
  • 1 tablespoon cornflour
  • 1/4 cup parmesan - grated
  • 2 handfuls baby spinach
  • Pinch chili flakes
  • 1 tablespoon lemon juice
  • Garlic salt and freshly ground pepper to taste

Method

Salmon Florentine Fettucine

  • Cook the pasta in salted boiling water for 8 minutes. Set aside 1/2 cup pasta water when you drain the pasta.
  • Season the salmon fillets with garlic salt, pepper and chili.
  • Heat 1 tablespoon cooking oil in a large frying pan.
  • Cook the salmon over a medium heat for 2 1/2 minutes each side - set aside on a warm plate and cover with foil.
  • To the pan, add the onion and garlic and sauté for a few minutes.
  • Combine the cream, milk, pasta water and cornflour. Add to the pan.
  • Add in the parmesan, spinach, chili and lemon juice. Stir through the pasta and season.
  • Place the salmon fillets on top of the pasta to heat through.
