Salmon Florentine Fettucine
- 2 salmon fillets - skin on
- Garlic salt and freshly ground black pepper
- Pinch chili flakes
- 1 tablespoon cooking oil
- 150g fettucine
Florentine Sauce
- 1/2 onion - finely diced
- 4 cloves garlic - crushed
- 1 1/4 cups cream
- 1/2 cup each: milk, pasta water
- 1 tablespoon cornflour
- 1/4 cup parmesan - grated
- 2 handfuls baby spinach
- Pinch chili flakes
- 1 tablespoon lemon juice
- Garlic salt and freshly ground pepper to taste
Method
Salmon Florentine Fettucine
- Cook the pasta in salted boiling water for 8 minutes. Set aside 1/2 cup pasta water when you drain the pasta.
- Season the salmon fillets with garlic salt, pepper and chili.
- Heat 1 tablespoon cooking oil in a large frying pan.
- Cook the salmon over a medium heat for 2 1/2 minutes each side - set aside on a warm plate and cover with foil.
- To the pan, add the onion and garlic and sauté for a few minutes.
- Combine the cream, milk, pasta water and cornflour. Add to the pan.
- Add in the parmesan, spinach, chili and lemon juice. Stir through the pasta and season.
- Place the salmon fillets on top of the pasta to heat through.
