Ingredients

Spring Salad

  • 1/2 Cos lettuce - washed and cut into chunks
  • 1 avocado - sliced and drizzled with lemon juice
  • 6 asparagus spears - trimmed, cut into thirds and boiled for 1 minute in salted boiling water
  • 1 cup frozen peas - thawed
  • Handful mint - chopped

Dressing - this makes 2 cups of dressing

  • 2/3 cup buttermilk - or 2/3 cup milk mixed with 1 tablespoon lemon juice and set aside for 10 minutes.
  • 1 cup mayonnaise
  • 1/4 cup parmesan - finely grated
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon each: onion powder, onion flakes
  • 1/4 teaspoon garlic powder
  • 1 tablespoon each: chopped chives, dill, parsley
  • Garlic salt and freshly ground black pepper to taste

Method

Spring Salad

  • Combine all the salad ingredients together in a bowl.
  • Whisk all the dressing ingredients together.
  • Drizzle the salad with the dressing just prior to serving.
