Ingredients

Steak with Creamy Mustard & Bourbon Sauce

  • 4 steaks
  • Garlic salt and freshly ground black pepper
  • 1 tablespoon cooking oil

Creamy Mustard & Bourbon Sauce

  • 30g butter
  • 1/3 cup shallot - finely chopped
  • 1/2 cup bourbon
  • 1 1/2 cups cream
  • 1 1/2 tablespoons grainy mustard
  • 1 teaspoon honey
  • 2 tablespoons fresh tarragon or thyme - finely chopped
  • Salt and pepper to taste

Method

Steak with Creamy Mustard & Bourbon Sauce

  • Season the steaks with garlic salt and pepper. Drizzle with the oil.
  • Heat a frying pan over a high heat. Add the steaks and cook to your liking.
  • Rest the steaks on a warm plate and cover with foil.

Creamy Mustard & Bourbon Sauce

  • Turn the heat down on the pan and add in the butter and chopped shallot. Sauté for 2 minutes.
  • Add in the bourbon and reduce by half.
  • Add in the cream, mustard and honey. simmer until the sauce thickens.
  • Add in the fresh herbs, steak resting juices and season.
  • Serve the steaks with a good spoonful of the sauce.
