Steak with Creamy Mustard & Bourbon Sauce
- 4 steaks
- Garlic salt and freshly ground black pepper
- 1 tablespoon cooking oil
Creamy Mustard & Bourbon Sauce
- 30g butter
- 1/3 cup shallot - finely chopped
- 1/2 cup bourbon
- 1 1/2 cups cream
- 1 1/2 tablespoons grainy mustard
- 1 teaspoon honey
- 2 tablespoons fresh tarragon or thyme - finely chopped
- Salt and pepper to taste
Method
Steak with Creamy Mustard & Bourbon Sauce
- Season the steaks with garlic salt and pepper. Drizzle with the oil.
- Heat a frying pan over a high heat. Add the steaks and cook to your liking.
- Rest the steaks on a warm plate and cover with foil.
Creamy Mustard & Bourbon Sauce
- Turn the heat down on the pan and add in the butter and chopped shallot. Sauté for 2 minutes.
- Add in the bourbon and reduce by half.
- Add in the cream, mustard and honey. simmer until the sauce thickens.
- Add in the fresh herbs, steak resting juices and season.
- Serve the steaks with a good spoonful of the sauce.
