Ingredients

Sticky Sausages with Mustard Mash

  • 8 - 10 pork sausages
  • Drizzle cooking oil
  • Sprig fresh rosemary

Sticky Sauce

  • 1/4 cup balsamic vinegar
  • 1/4 cup orange marmalade
  • 1/4 cup soy sauce
  • 2 teaspoons Dijon mustard

Mustard Mash

  • 6 medium potatoes - peeled and cut into chunks
  • 45g butter
  • 1 tablespoon Dijon mustard
  • 1 tablespoon wholegrain mustard
  • 1/4 cup cream
  • Handful fresh parsley - finely chopped

Method

Mustard Mash

  • Place the potatoes into a saucepan with salted water. Simmer until tender. Drain the potatoes, add in the butter, replace the lid for several minutes to steam the potatoes.
  • Mash the potatoes, add in the mustards, cream and parsley. Continue to mash until creamy.

Sticky Sausages

  • Heat the oil in a large frying pan over a medium heat. Brown the sausages on all sides.
  • In a small bowl, whisk all the sticky sauce ingredients together. Tip the sauce over the sausages and continue to cook until the sausages and sticky and cooked through.
  • Serve the sausages with the mustard mash.
