Sticky Sausages with Mustard Mash
- 8 - 10 pork sausages
- Drizzle cooking oil
- Sprig fresh rosemary
Sticky Sauce
- 1/4 cup balsamic vinegar
- 1/4 cup orange marmalade
- 1/4 cup soy sauce
- 2 teaspoons Dijon mustard
Mustard Mash
- 6 medium potatoes - peeled and cut into chunks
- 45g butter
- 1 tablespoon Dijon mustard
- 1 tablespoon wholegrain mustard
- 1/4 cup cream
- Handful fresh parsley - finely chopped
Method
Mustard Mash
- Place the potatoes into a saucepan with salted water. Simmer until tender. Drain the potatoes, add in the butter, replace the lid for several minutes to steam the potatoes.
- Mash the potatoes, add in the mustards, cream and parsley. Continue to mash until creamy.
Sticky Sausages
- Heat the oil in a large frying pan over a medium heat. Brown the sausages on all sides.
- In a small bowl, whisk all the sticky sauce ingredients together. Tip the sauce over the sausages and continue to cook until the sausages and sticky and cooked through.
- Serve the sausages with the mustard mash.
