Ingredients
Strawberry Compote
- 1 cup fresh or frozen strawberries - mashed
- 1 cup water
- 1/2 cup sugar
- 1 tablespoon cornflour
Dipping Mixture
- 1/2 cup milk
- 3 eggs
- Pinch cinnamon
Cream Cheese Filling & Other Ingredients
- 150g cream cheese
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1 ciabatta load - cut into 4 x 3cm slices, then cut a slit in each of the slices that almost reaches to the back.
- 20g butter
- Fresh strawberries, cinnamon sugar and icing sugar for serving.
Method
Strawberry Cheesecake Stuffed French Toast
- Combine all the strawberry compote ingredients together in a small saucepan. Heat over a medium heat until thickened - set aside.
- In a medium bowl, whisk all the dipping ingredients together - set aside.
- In another bowl, beat together the cream cheese, sugar and vanilla extract until creamy.
- Spread the cream cheese mixture into each of the four pieces of bread.
- Heat the butter in a large frying pan.
- Dip each piece of bread into the dipping mixture.
- Cook the French toast for about 3 - 5 minutes on each side over a medium/high heat or until they are golden brown.
- Serve with the strawberry compote, fresh strawberries, cinnamon sugar and icing sugar.
