Ingredients

Strawberry Compote

  • 1 cup fresh or frozen strawberries - mashed
  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon cornflour

Dipping Mixture

  • 1/2 cup milk
  • 3 eggs
  • Pinch cinnamon

Cream Cheese Filling & Other Ingredients

  • 150g cream cheese
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 ciabatta load - cut into 4 x 3cm slices, then cut a slit in each of the slices that almost reaches to the back.
  • 20g butter
  • Fresh strawberries, cinnamon sugar and icing sugar for serving.

Method

Strawberry Cheesecake Stuffed French Toast

  • Combine all the strawberry compote ingredients together in a small saucepan. Heat over a medium heat until thickened - set aside.
  • In a medium bowl, whisk all the dipping ingredients together - set aside.
  • In another bowl, beat together the cream cheese, sugar and vanilla extract until creamy.
  • Spread the cream cheese mixture into each of the four pieces of bread.
  • Heat the butter in a large frying pan.
  • Dip each piece of bread into the dipping mixture.
  • Cook the French toast for about 3 - 5 minutes on each side over a medium/high heat or until they are golden brown.
  • Serve with the strawberry compote, fresh strawberries, cinnamon sugar and icing sugar.
