Sweet and Sour Meatballs

Ingredients

Meatballs

  • 550g pork mince
  • 1 cup fresh breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/2 teaspoon each: garlic salt, garlic powder, onion powder
  • 1/4 teaspoon pepper
  • 1/8 teaspoon chilli flakes

Sweet & Sour Sauce

  • 432g can pineapple pieces in juice - juice only
  • 1/4 cup each: light soy sauce, water
  • 2 tablespoons each: soy sauce, tomato sauce, rice wine vinegar, brown sugar, cornflour

Stir Fry

  • 2 tablespoons cooking oil
  • 1 red pepper - cut into chunks
  • 1 red onion - cut into chunks
  • Pineapple pieces from the drained can
  • Rice for serving

Method

Sweet & Sour Pork Meatballs

  • Combine all the meatball ingredients together. Roll into balls then refrigerate.
  • In a small bowl, whisk the sauce ingredients together - set aside.
  • In a large wok, heat the oil over medium/high heat. Sauté the meatballs until well browned (about 10 minutes). Set aside.
  • Add a little more oil to the wok if needed and sauté the red pepper and red onion for a few minutes. Add in the pineapple pieces and the sauce. Bring to a simmer.
  • Add the meatballs back into the wok and simmer for 2 minutes.
  • Serve the meatballs and sauce with rice.
