Ingredients

Sweet Chili Pork Fillet with Orange & Maple Kumara Puree

  • 2 x 350g pork fillets
  • 1 tablespoon cooking oil
  • 1 teaspoon paprika
  • Garlic salt and freshly ground black pepper

Sauce

  • 2 teaspoons fresh ginger - grated
  • 1 tablespoon soy sauce
  • 1/4 cup Thai sweet chili sauce
  • 1 teaspoon sesame oil

Method

Sweet Chili Pork Fillet with Orange & Maple Kumara Puree

  • Preheat oven to 180oC (160oC fan bake).
  • Smother the pork fillets with the cooking oil, paprika, garlic salt and pepper.
  • In a small bowl, whisk all the sauce ingredients together.
  • Heat an oven proof frying pan over a medium/high heat. Sear the pork fillets on all sides.
  • Place the pork into the oven and cook for 5 minutes.
  • Remove from the oven and brush over some of the sauce.
  • Cook the pork for another 5 minutes. Leave to rest in the pan for 5 minutes.
  • Serve the pork on top of the puree and drizzle with the remaining sauce.
