Ingredients
Base
- 2 x 128g packets cream filled chocolate Oreos
- 80g butter - melted
Cheesecake Filling
- 2 teaspoons gelatine
- 250g cream cheese - warmed slightly in the microwave
- 500g mascarpone
- 1/4 cup caster sugar
- 1 cup cream
- 1/2 cup icing sugar
- 2 teaspoons vanilla extract
Lady Fingers & Kahlua Whipped Crea
- 3 tablespoons boiling water
- 2 tablespoons instant coffee
- 1 cup Kahlua
- 12 x Lady Fingers
- 1 cup cream
- Any leftover Kahlua mixture
- 1/2 cup icing sugar
- 1 tablespoon cocoa
- Chocolate wafers and edible flowers for serving - optional
Method
Tiramisu Cheesecake
- Blitz the Oreos together with the melted butter. Press into a 22cm round, loose bottom cake tin. Place in the fridge.
- Mix the gelatine with 2 tablespoons water and microwave for 20 seconds. Stir until gelatine is dissolved - set aside to cool.
- Beat together the cream cheese, mascarpone, icing sugar and gelatine.
- In another bowl, beat together the cream, icing sugar and vanilla extract. Fold through the cream cheese mixture.
- In a shallow bowl, combine the boiling water, coffee and Kahlua.
- Dip each Lady Finger in separately and place on top of the cheesecake base.
- Spread the cheesecake filling over the Lady Fingers and place in the fridge for 5 - 6 hours or overnight to set.
- To serve - whip together the cream, any leftover Kahlua mixture and 1/2 cup icing sugar until stiff peaks form.
- Using a piping bag with a plain nozzle, pipe the cream over the top of the cheesecake.
- Dust with cocoa and decorate with chocolate wafers and edible flowers.
