Ingredients

Whisky, Honey & Mustard Salmon

  • 2 salmon fillets - skin on
  • Salt and freshly ground black pepper
  • 2 teaspoons olive oil

Whisky Glaze

  • 1/4 cup honey
  • 2 tablespoons whisky
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon apple cider vinegar

Method

Whisky, Honey & Mustard Salmon

  • Place all the whisky glaze ingredients together in a small saucepan. Whisk and simmer for two minutes - set aside.
  • Season the salmon fillets with salt and pepper.
  • Preheat the oven grill to 190oC (170oC fan grill).
  • Heat the oil in an ovenproof pan. Cook the salmon, skin side down for 4 minutes.
  • Pour the glaze over the salmon and grill for 3 - 5 minutes, or until cooked to your liking.
  • Serve the salmon with the juices from the pan.
