Ingredients
Whisky, Honey & Mustard Salmon
- 2 salmon fillets - skin on
- Salt and freshly ground black pepper
- 2 teaspoons olive oil
Whisky Glaze
- 1/4 cup honey
- 2 tablespoons whisky
- 1 tablespoon wholegrain mustard
- 1 tablespoon Dijon mustard
- 1/2 tablespoon soy sauce
- 1/2 tablespoon apple cider vinegar
Method
Whisky, Honey & Mustard Salmon
- Place all the whisky glaze ingredients together in a small saucepan. Whisk and simmer for two minutes - set aside.
- Season the salmon fillets with salt and pepper.
- Preheat the oven grill to 190oC (170oC fan grill).
- Heat the oil in an ovenproof pan. Cook the salmon, skin side down for 4 minutes.
- Pour the glaze over the salmon and grill for 3 - 5 minutes, or until cooked to your liking.
- Serve the salmon with the juices from the pan.
