Ingredients

Zaatar yoghurt Chicken

  • 8 boneless chicken thighs

Zaatar seasoning

  • 3 tablespoons toasted sesame seeds
  • 2 tablespoons sumac
  • 1/2 tablespoon salt
  • 1 1/2 tablespoons dried thyme
  • 1 1/2 tablespoons dried coriander
  • 1 tablespoon dried oregano
  • 1/2 tablespoon ground cumin

Marinade

  • 1 cup plain Greek yoghurt
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 2 cloves garlic - crushed
  • 2 tablespoons zaatar seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon chilli flakes
  • Chopped fresh parsley for serving

Method

Zaatar Yoghurt Chicken

  • Mix all of the zaatar seasoning ingredients together - set aside. There will be extra seasoning which is great on roast vegetables or lamb chops.
  • Whisk all of the marinade ingredients together and marinate the chicken for 2 - 24 hours.
  • Preheat the oven to 200oC (180oC fan bake). Spray a baking dish with baking spray.
  • Shake excess marinade from the chicken and place in a single layer into the baking dish.
  • Bake uncovered for 30 minutes or until golden brown.
  • Serve sprinkled with fresh chopped parsley.
