Ingredients
Zaatar yoghurt Chicken
- 8 boneless chicken thighs
Zaatar seasoning
- 3 tablespoons toasted sesame seeds
- 2 tablespoons sumac
- 1/2 tablespoon salt
- 1 1/2 tablespoons dried thyme
- 1 1/2 tablespoons dried coriander
- 1 tablespoon dried oregano
- 1/2 tablespoon ground cumin
Marinade
- 1 cup plain Greek yoghurt
- 2 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- Zest of 1 lemon
- 2 cloves garlic - crushed
- 2 tablespoons zaatar seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon chilli flakes
- Chopped fresh parsley for serving
Method
Zaatar Yoghurt Chicken
- Mix all of the zaatar seasoning ingredients together - set aside. There will be extra seasoning which is great on roast vegetables or lamb chops.
- Whisk all of the marinade ingredients together and marinate the chicken for 2 - 24 hours.
- Preheat the oven to 200oC (180oC fan bake). Spray a baking dish with baking spray.
- Shake excess marinade from the chicken and place in a single layer into the baking dish.
- Bake uncovered for 30 minutes or until golden brown.
- Serve sprinkled with fresh chopped parsley.
