For the Carrot and Apple Pikelets
- 1 cup self-raising flour
- 2 tablespoons caster sugar
- 1/2 carrot, grated
- 1 apple, peeled, cored and grated
- 1/2 cup milk
- 1 egg
Method
For the Carrot and Apple Pikelets
- Sift flour into a large bowl. Stir in the caster sugar, carrot and apple. Make a well in the centre.
- Whisk the milk and egg in a jug and add to the flour mixture. Stir until just combined.
- Heat a large, non-stick frying pan over moderate heat. Add a knob of butter.
- Using a tablespoon of batter for each pikelet, cook until golden brown and then turn over to cook the other side.
- Serve with butter and a sprinkle of sugar.
