Ingredients
For the Chocolate Cake
- 2 cups flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1⁄2 cup buttermilk (substitute with 1⁄2 cup of milk and 1⁄2 tablespoon of white vinegar or lemon juice)
- 2 eggs
- 2 teaspoons vanilla essence
- 1⁄2 cup cocoa
- 1 cup black coffee (made with 2 teaspoons of instant coffee)
- 230g butter
For the Chocolate Icing
- 3 cups icing sugar
- 1/4 cup cocoa
- 50g melted butter
- Boiling water as required
Method
For the Chocolate Cake
- Put all the dry ingredients in a large bowl and whisk together.
- In a small bowl mix together the buttermilk, eggs and vanilla. Set aside.
- In a small saucepan add the cocoa and coffee and mix well.
- Add the butter to the cocoa and melt over a medium heat. Remove from the heat.
- Mix the cocoa mixture into the dry ingredients.
- Add in the buttermilk mixture and mix well.
- Pour the mixture into a lined cake tin.
- Bake at 180°C (160°C fan bake) for 40 minutes. Check the cake is cooked by inserting a cake skewer. If it comes out clean the cake is cooked.
- Leave to cool. Remove the cake from the pan and
ice.
For the Chocolate Icing
- Mix the icing sugar and cocoa together.
- Pour in the melted butter and mix. Pour in a small amount of boiling water to get an icing consistency.
- Spread over the cake
- Leave to set and cut into pieces
