Ingredients
For the Hawaiian chicken kebabs
- 500g chicken thigh fillets, cut into 2.5cm cubes
- 1 fresh pineapple, cut into 2.5cm cubes
- 1 red pepper, cut into 2.5cm cubes
- 1 green pepper, cut into 2.5cm cubes
- 1 large red onion, cut into 2.5cm pieces
- salt and freshly ground black pepper
- 1 tablespoon olive oil
For the sauce
- 1/2 cup barbecue sauce
- 1/2 cup soy sauce
- 1/4 cup pineapple juice
- 1 tablespoon brown sugar
- 1 tablespoon rice wine vinegar
- 3 cloves garlic, crushed
- 1 teaspoon sesame oil
Method
For the Hawaiian chicken kebabs
- Thread the chicken, alternated with cubes of pineapple and vegetables, onto skewers.
- Season with salt and pepper.
- In a medium size bowl whisk all the sauce ingredients together.
- Brush the skewers with some of the sauce.
- Heat the oil in a large frying pan over a low heat.
- Cook the kebabs for about 10–12 minutes, regularly brushing them with the remaining sauce,
until golden brown.
