Ingredients
Jelly Slice
- 2 packets jelly crystals, any flavour
- 3 cups boiling water
- 175g butter, melted
- 1 x 250g packet sweet biscuits, blitzed in a food processor
- 2 tablespoons gelatine powder
- 1/2 cup boiling water
- 1 x 395g can sweetened condensed milk
- juice of 1 lemon
Method
Jelly Slice
- Line a 25cm x 25cm slice tin with baking paper.
- Make up both the jellies together with 3 cups of boiling water and place in the fridge.
- Combine the melted butter with the biscuit crumbs and press into the prepared tin.
- Place in the fridge for at least 30 minutes.
- In a medium bowl add the gelatine with 1/2 cup boiling water and stir until the gelatine is dissolved. Whisk in the condensed milk and lemon juice.
- Pour the condensed milk mixture over the biscuit base and place in the fridge for an hour.
- Once the jelly is cooled but not set, carefully pour it over the condensed milk layer.
- Place in the fridge to set.
- Once set, use a hot knife to cut the slice into pieces.
- Store in the fridge.
