Ingredients

Jelly Slice

  • 2 packets jelly crystals, any flavour
  • 3 cups boiling water
  • 175g butter, melted
  • 1 x 250g packet sweet biscuits, blitzed in a food processor
  • 2 tablespoons gelatine powder
  • 1/2 cup boiling water
  • 1 x 395g can sweetened condensed milk
  • juice of 1 lemon

Method

Jelly Slice

  • Line a 25cm x 25cm slice tin with baking paper.
  • Make up both the jellies together with 3 cups of boiling water and place in the fridge.
  • Combine the melted butter with the biscuit crumbs and press into the prepared tin.
  • Place in the fridge for at least 30 minutes.
  • In a medium bowl add the gelatine with 1/2 cup boiling water and stir until the gelatine is dissolved. Whisk in the condensed milk and lemon juice.
  • Pour the condensed milk mixture over the biscuit base and place in the fridge for an hour.
  • Once the jelly is cooled but not set, carefully pour it over the condensed milk layer.
  • Place in the fridge to set.
  • Once set, use a hot knife to cut the slice into pieces.
  • Store in the fridge.
