Ingredients

For the Roast Potatoes

  • 1kg (6–8) washed potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt — garlic salt is good for this
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried rosemary or thyme

Method

For the Roast Potatoes

  • Preheat the oven to 200°C (180°C fan bake).
  • Line an oven tray with baking paper.
  • Cut each potato into quarters if they are small or into eighths if they are large.
  • Toss the potatoes in a bowl with the olive oil, salt, pepper and herbs.
  • Arrange on the oven tray in a single layer.
  • Cook for 40 minutes or until the potatoes are golden brown and cooked through.
