For the Roast Potatoes
- 1kg (6–8) washed potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt — garlic salt is good for this
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon dried rosemary or thyme
Method
For the Roast Potatoes
- Preheat the oven to 200°C (180°C fan bake).
- Line an oven tray with baking paper.
- Cut each potato into quarters if they are small or into eighths if they are large.
- Toss the potatoes in a bowl with the olive oil, salt,
pepper and herbs.
- Arrange on the oven tray in a single layer.
- Cook for 40 minutes or until the potatoes are golden brown and cooked through.
