Carrot and Apple Pikelets

For the Carrot and Apple Pikelets

  • 1 cup self-raising flour
  • 2 tablespoons caster sugar
  • 1/2 carrot, grated
  • 1 apple, peeled, cored and grated
  • 1/2 cup milk
  • 1 egg


For the Carrot and Apple Pikelets

  • Sift flour into a large bowl. Stir in the caster sugar, carrot and apple. Make a well in the centre.
  • Whisk the milk and egg in a jug and add to the flour mixture. Stir until just combined.
  • Heat a large, non-stick frying pan over moderate heat. Add a knob of butter.
  • Using a tablespoon of batter for each pikelet, cook until golden brown and then turn over to cook the other side.
  • Serve with butter and a sprinkle of sugar.
