Ingredients

For the chocolate mousse

  • 500ml cream
  • 250g dark cooking chocolate, chopped
  • 1 tablespoon sugar
  • 1 teaspoon vanilla essence

Method

For the chocolate mousse

  • Heat half of the cream in a saucepan until bubbles begin to form around the edge.
  • Place the chocolate into a heatproof bowl.
  • Pour the hot cream over the chocolate and add the sugar and vanilla essence.
  • Leave it to melt for a minute, then whisk until the chocolate is completely melted.
  • In a separate bowl whisk the remaining cream.
  • Fold the whipped cream into the chocolate mixture.
  • Pour into serving glasses and leave to set in the fridge.
