Ingredients

For the Hawaiian chicken kebabs

  • 500g chicken thigh fillets, cut into 2.5cm cubes
  • 1 fresh pineapple, cut into 2.5cm cubes
  • 1 red pepper, cut into 2.5cm cubes
  • 1 green pepper, cut into 2.5cm cubes
  • 1 large red onion, cut into 2.5cm pieces
  • salt and freshly ground black pepper
  • 1 tablespoon olive oil

For the sauce

  • 1/2 cup barbecue sauce
  • 1/2 cup soy sauce
  • 1/4 cup pineapple juice
  • 1 tablespoon brown sugar
  • 1 tablespoon rice wine vinegar
  • 3 cloves garlic, crushed
  • 1 teaspoon sesame oil

Method

For the Hawaiian chicken kebabs

  • Thread the chicken, alternated with cubes of pineapple and vegetables, onto skewers.
  • Season with salt and pepper.
  • In a medium size bowl whisk all the sauce ingredients together.
  • Brush the skewers with some of the sauce.
  • Heat the oil in a large frying pan over a low heat.
  • Cook the kebabs for about 10–12 minutes, regularly brushing them with the remaining sauce, until golden brown.
