Cake Pops

What you'll need

  • Left over cake cuttings / cupcakes or store brought cake mix
  • Cake pop sticks
  • Buttercream icing or store brought icing
  • Sprinkles / decorations of choice
  • White chocolate
  • Food colouring

Instructions

1. 

  • Using your hands, rub the cake mixture until it turns to fine crumbs
  • Make up the butter with an electric or stand mixer for 5 minutes until fluffy, gradually add the icing sugar 1 tablespoon at a time until the mixture comes together to form a fluffy buttercream
  • Mix the buttercream into the cake crumbs (add buttercream one tablespoon at a time to avoid the mixture being too wet)
  • Once at a sticky consistency, roll the cake mixture into balls
  • Melt the white chocolate and dip the end of the cake pop sticks into it, then press into the cake pops
  • Allow to set in the refrigerator
  • Once the cake pops are set, melt the white chocolate in a microwave safe cup or bowl (try to use a mug or a deeper dish so you can submerge the cake pops completely into the chocolate)
  • Add food colouring to the chocolate, allowing any excess chocolate to drip off and place on the parchment paper
  • Add sprinkles or decorations and transfer to the refrigerator to set for an hour
  • Enjoy!
