Jelly Slice

This is one of our favourite slices. I’ve used blueberry jelly here, but you can use any flavour you like.

Ingredients
- 2 x 85g packets jelly crystals
- 3 cups boiling water
- 250g packet sweet biscuits
- 175g butter – melted
- ½ cup boiling water
- 2 tablespoons gelatine
- 395g can condensed milk
- Juice of 1 lemon
Method
- Line a 25cm square slice tin with baking paper.
- Place both packets of jelly crystals in a bowl, stir in the 3 cups boiling water and place in refrigerator.
- Blitz the biscuits to a crumb in a food processor.
- Pulse in the butter.
- Press into the prepared tin. Refrigerate until needed.
- Place the ½ cup boiling water in a medium bowl and sprinkle the gelatine over the top.
- Whisk the gelatine until it is dissolved, then whisk in the condensed milk and lemon juice.
- Pour the mixture over the biscuit base.
- Refrigerate for about 2 hours until set.
- Pour the almost-set jelly over the top.
- Refrigerate to set completely before cutting into 12 squares.
