Jelly Slice

This is one of our favourite slices. I’ve used blueberry jelly here, but you can use any flavour you like.

Ingredients

  • 2 x 85g packets jelly crystals
  • 3 cups boiling water
  • 250g packet sweet biscuits
  • 175g butter – melted
  • ½ cup boiling water
  • 2 tablespoons gelatine
  • 395g can condensed milk
  • Juice of 1 lemon

Method

  • Line a 25cm square slice tin with baking paper.
  • Place both packets of jelly crystals in a bowl, stir in the 3 cups boiling water and place in refrigerator.
  • Blitz the biscuits to a crumb in a food processor.
  • Pulse in the butter.
  • Press into the prepared tin. Refrigerate until needed.
  • Place the ½ cup boiling water in a medium bowl and sprinkle the gelatine over the top.
  • Whisk the gelatine until it is dissolved, then whisk in the condensed milk and lemon juice.
  • Pour the mixture over the biscuit base.
  • Refrigerate for about 2 hours until set.
  • Pour the almost-set jelly over the top.
  • Refrigerate to set completely before cutting into 12 squares.
