A never-fail, light-as-air scone.



For the lemonade scones

  • 2 cups self-rising flour
  • 1⁄4 cup caster sugar
  • 1⁄2 teaspoon salt
  • 1⁄2 cup cream
  • 1⁄2 cup lemonade
  • Jam and whipped cream, to serve


For the lemonade scones

  • Preheat the oven to 220°C (200°C fan bake). Line a baking tray with baking paper.
  • Place the flour, sugar and salt in a large bowl and whisk until well combined. Add the cream and lemonade and mix to form a soft dough.
  • Turn out onto a lightly floured surface and knead lightly until combined.
  • Press the dough out with your hands to a thickness of about 2cm. Use a 6cm round cutter to cut out 8 scones.
  • Arrange on the prepared tray and bake for 10–15 minutes until lightly browned.
  • Serve warm with jam and whipped cream.
