A never-fail, light-as-air scone.
Ingredients
For the lemonade scones
- 2 cups self-rising flour
- 1⁄4 cup caster sugar
- 1⁄2 teaspoon salt
- 1⁄2 cup cream
- 1⁄2 cup lemonade
- Jam and whipped cream, to serve
Method
For the lemonade scones
- Preheat the oven to 220°C (200°C fan bake). Line a baking tray with baking paper.
- Place the flour, sugar and salt in a large bowl and whisk until well combined. Add the cream and lemonade and mix to form a soft dough.
- Turn out onto a lightly floured surface and knead lightly until combined.
- Press the dough out with your hands to a thickness of about 2cm. Use a 6cm round cutter to cut out 8 scones.
- Arrange on the prepared tray and bake for 10–15 minutes until lightly browned.
- Serve warm with jam and whipped cream.
